Curing Salmon Eggs

Whenever you are fishing for large sport fish, aged salmon eggs are the perfect bait. Largemouth bass, muskellunge, lake trout, and additional large fish species love them.

Here’s how to cure salmon eggs to utilize as bait:

When you take out the eggs from a salmon you are cleaning, keep the egg sacs–also known as skeins–intact. Cover a big, flat,moveable surface with 1/4 inch of borax. Cut the egg sacs (skeins) across the membrane in slits of 3 to 4 inches. Lay the egg sac (skein) sections 1 inch apart on top of the borax. Sprinkle more borax over the top to produce a light coating. Make certain all egg sacs are covered.

Relocate the large mobile surface that the eggs are on into a sheltered area that has ample circulation all around. The eggs must not be in direct sunlight and cannot get wet, so make certain they are safe from precipitation. Permit the sacs to dry for 2 to 3 days, making sure to rotate them every 12 hours.

Pick the egg sacs out of the borax and shake any Put them in plastic bags or storage containers. The egg sacs are ready to use when they are totally dry and feel leathered, but pliable. Form the paste into a large ball and knead by hand. Add 10 drops of the aged cheddar flavoring to a freezer bag and arrange the cheese paste ball into the bag. Put in the freezer.

When it is thawed, this bait has a very attractive consistency and texture, and a very powerful cheesy odor. Roll the thawed paste into cheese balls and put into a container for your next fishing trip.

When you place a cheese ball onto your hook, set the hook’s point into the center, cast and wait patiently for the fish to nibble. Optionally you may add a few drops of red food coloring to the paste, but it isn’t requisite.

Whether you are considering home cheese making for personal enjoyment, school projects, or historical significance, cheese making recipes are available for every type of cheese for the home project.  Understanding the basics about how to make cheese will help you find the right basic recipe so that you can begin your new and exciting project.

Home cheese making is simply re-creating the process at home that usually happens in a factory.  Cheese comes in different form, from soft to hard, and the process is a little different for each type.  How do you do this at home?

All cheese comes from the solid curds from soured milk, which are either produced by cows, goats, or even sheep.  Once the curds have been separated from the liquid part (known as whey).  Once the curds are formed, they are salted to prevent spoiling, and molded into blocks or wheels.  The cheese actually uses bacteria to ripen, and it must mature before eating.

By using cheese making recipes and doing your own home cheese making, you can control the ingredients that go in your finished product.  You can choose organic products, and avoid the hormones that are frequently found it store products.   The quality control issue can’t be overlooked either – you will know every step it took to make your cheese, and you can proudly serve it to your friends and family.

Find the right cheese making recipes for your first attempt can seem overwhelming, but find a simple recipe to work with at first.  A soft, mild cheese will yield the most immediate results, with a soft cheese that can be eaten as is, or one that can be put through a press to create a crumbly cheese.

The first step in home cheese making  is to have the proper equipment.  Much like construction, you don’t want to get halfway in and realize you are missing a key piece.  Read through your recipe carefully and have all the appropriate ingredients and tools.  Depending on what type of cheese you decide to make, you will probably need  cheesecloth or muslin clothes, a mixing bowl, a palette or curd knife, large stock pan and a colander.  All items will need to be properly sterilized before beginning.

Your cheese making recipe you choose may vary, but basic ingredients include milk, crème fraiche or yoghurt, rennet and salt.  The milk can be fresh, from a cow or goat, or you can elect to choose organic milk.  Different types of milk will yield different types of results in regards to texture and final taste.

Once beginning the process, you will add the yoghurt or crème fraiche in the stockpot and leave it.  After about one half hour, the milk will begin to acidify and develop a rich flavor.  

Using a thermometer, gently bring the milk up to a temperature of 28C or 82.4F.  Maintain this temperature.

Add the rennet to the milk. This is a product that can be found in most grocery stores in tablet or liquid form.  Once added to the milk mixture, it will start to congeal.  This is when you will be ready to collect the curds through the sterilized cheesecloth.  

Once they have been collected, cut them into smaller cubes, and put it in a cheesecloth “pouch”.  Drain for 8 hours – the best way is to leave it out overnight.

Once drained, add salt to the cheese.  This is for taste and to preserve the cheese.  Mix it in well to the cheese and shape the cheese with a mold.  Refrigerate your cheese once it has been completed.
