 <b>Curing Salmon Eggs</b></p>
<p>Whenever you are fishing for large sport fish, aged salmon eggs are the perfect bait. Largemouth bass, muskellunge, lake trout, and additional large fish species love them.</p>
<p>Here&#8217;s how to cure salmon eggs to utilize as bait:</p>
<p>When you take out the eggs from a salmon you are cleaning, keep the egg sacs&#8211;also known as skeins&#8211;intact. Cover a big, flat,moveable surface with 1/4 inch of borax. Cut the egg sacs (skeins) across the membrane in slits of 3 to 4 inches. Lay the egg sac (skein) sections 1 inch apart on top of the borax. <p>When you place a <b >cheese</b> ball onto your hook, set the hook&#8217;s point into the center, cast and wait patiently for the fish to nibble. Optionally you may add a few drops of red food coloring to the paste, but it isn&#8217;t requisite.</p>

<p>Once they have been collected, cut them into smaller cubes, and put it in a cheesecloth &#8220;pouch&#8221;.&nbsp; Drain for 8 hours &#8211; the best way is to leave it out overnight.</p>

			<content:encoded><![CDATA[<p>Beef Jerky has grown into a timeless staple of American snacking, as popular on camping trips as Smores. The first known Jerky was made by the Quechua Native American Tribe of South America in Peru around the time of 1550.</p>
<p>While even today we maintain the traditional style of drying meat because we enjoy it the Native American tribes actually did it out of necessity. When a tribe killed a large animal they couldn&#8217;t consume the entire animal in the very small period of time that it took for the meat to go bad.</p>
<p>The ancient process the Native Americans used to prepare this Jerky was surprisingly similar to the process we use to do it today. Take any meat and cut it thin to aid in drying. Remove as much of the fat content from the meat as possible as fat doesn&#8217;t dehydrate. Add any spices or additional flavoring you might like. Then use one of many methods of drying all the moisture out of the meat.</p>
<p>The Native Americans typically killed Buffalo, Deer, or Elk so the jerky was made with those animals, today we raise and eat beef most often so that is the meat we typically associate with Beef Jerky today, but pretty much any meat can be made successfully into jerky. Pork would be more difficult and not the best choice because the fat content is higher and the fat of the meat can not be dehydrated, but it is by no means impossible.</p>
<p>Adding a little extra flavor has always been popular in Jerky <b >making</b>. Some of the most popular spices like Salt, Vinegar, Sugar, Ground Pepper, other Herbs and Spices where just as popular then as they are today. Once spiced they rolled it up in animal hide and either sun dried or smoked it high above a fire for a period from 10 to 12 hours up to 2 or 3 days.</p>
<p>Today Jerky can be made from virtually any cut of meat and virtually any animal. It can be spiced with pre-made spices or any home concoction of spices you can come up with, there are an infinite number of recipe ideas available. Then dried either in a fancy dehydrator or simply in any oven. 			<content:encoded><![CDATA[<p>So you&#8217;ve done your research on the Web or through cookbooks and finally, after much trial and error, you&#8217;ve settled on one recipe that not only produces the results you want, but provides the taste you&#8217;ve looked for. You&#8217;ve made it a dozen or so times, and are fairly confident you know the ins and outs and all the potential pitfalls.</p>
<p>Don&#8217;t be surprised to find yourself getting a little bit bored. It&#8217;s hard to believe you could ever grow discontented with the creamy perfection that is the New York style cheesecake, but it is human nature to seek out variety in all things. However, the base structure of the recipe is in such perfect balance that it does not invite much in the way of real change. You can add the occasional chocolate chip, a touch of amaretto or other flavoring, but that&#8217;s about it.</p>
<p>Of course, you could spend months exploring the various add-ins, and that&#8217;s all well and fine. But why not go outside the structure of the cheesecake and look at some of the sauces you can create? Let&#8217;s look at the three main types:</p>
<p>Chocolate: Who doesn&#8217;t like a good chocolate sauce? There really is no &#8220;<b >making</b>&#8221; to the sauce, really. Once you&#8217;ve got your double boiler going and a little heavy cream to mix with your chocolate, you&#8217;re in business. Don&#8217;t forget that you aren&#8217;t limited to milk chocolate. Dark and bittersweet chocolates can add variety!</p>
<p>Caramel: This sauce is tricky to make, involving molten sugar that has the same characteristics (and damage abilities) as lava. However, once made, it will keep just about forever and the flavor is unlike anything else.</p>
<p>Fruit: From blueberries and strawberries to peaches and mangos, there are as many different kinds of fruit sauces as there are fruits in the market. Let your imagination run wild!</p>
<p>So remember, the next time you want to do something different with your cheesecake &#8230; build on top, not inside to make your New York style cheesecake recipes your own.</p>

			<content:encoded><![CDATA[<p>You think <b >making</b> wine at home is too difficult or require too much time or <b >equipment</b>? Then think again. As far as time is concerned, you will learn that most of the time is spent just&#8230; waiting! Wine is the result of many complex chemical and biological reactions. In this regard, it is like a living entity. Like any living entity, it takes time to grow up, develop, and achieve its full potential. All this happens without your intervention. Your role is only to create the right conditions at the right moment, and this takes very little time over the whole course of the winemaking process.</p>
<p>Regarding <b >equipment</b>, you can get started with only:</p>
<p>-	Two 5-gallon buckets<br />
<br />-	A lid with an airlock (one is enough)<br />
<br />-	Some pipe or hose to transfer from one bucket to the other<br />
<br />-	4 Campden tablets, or equivalent (sulfites)<br />
<br />-	Some bakers yeast (more specialized yeasts for wine <b >making</b> can be used, but this is a topic that will be covered in further articles)<br />
<br />-	A wine stabilizer (most common is Potassium Sorbate, available online or in a specialized wine shop)<br />
<br />-	A sanitizing product (for food-related use)<br />
<br />-	If you want to bottle your wine, a corker, plus some corks and bottles (otherwise it can also be kept in any hermetically closed container)</p>
<p>Last but not least, you need the raw material, that is to say the fruit juice from which you are going to create your wine. Traditionally, the term &#8220;wine&#8221; refers to wine made from grapes. However, many fruit juices can also make delicious wines, like cranberry juice, cherry juice&#8230; Grape juice is however the most common and easiest to find. Be careful however to get juice without added preservatives, as these will prevent fermentation.</p>
<p>Now, here is the step-by-step process to make your first batch of wine.</p>
<p>Clean and sterilize the buckets and all the <b >equipment</b> in contact with the wine, using the sanitizing product. Rinse well. Put your juice into one of the buckets.</p>
<p>Dissolve the 4 Campden tablets in the juice. This will prevent unwanted bacteria development. Wait a full night.</p>
<p>The day after, you can add the yeast. First, dissolve the yeast in a small quantity of warm water, wait 15 minutes and then pour it into the juice.</p>
<p>Cover the bucket with a cloth towel, or your lid. The airlock is not necessary at this stage since the fermentation process releases abundant CO2, which protects the juice from oxidation from the surrounding air.</p>
<p>Wait 7 days. During this time, you will see abundant activity and gas release.</p>
<p>Then, transfer the wine to the second bucket. During this operation, you should be careful not to transfer the gunk lying at the bottom of the first bucket. This gunk is mainly made of dead yeast, and it is safer to remove it in order to avoid undesired bad flavor in the wine.</p>
<p>In the new bucket, a secondary fermentation will take place, albeit much less spectacular. It is much slower and does not release significant CO2, so that you should now place the airlock to protect the wine.</p>
<p>This time, wait one month. As I told you, waiting constitutes the major part of the process! Resist the temptation to taste the wine right now, and remember it is still not finished.</p>
<p>After one month, you should repeat the same operation and transfer back the wine into the first &#8211; clean &#8211; bucket. In the same manner, try to leave most of the gunk at the bottom.</p>
<p>You should now add your stabilizer, in order to block any future fermentation and get a stable wine.</p>
<p>Now your wine is &#8220;biologically&#8221; finished, but it still needs to be cleared. This is done, again, by&#8230; waiting another month. The wine will clear itself naturally, by simple gravity. All impurities will just slowly fall at the bottom of the bucket. Sure, a cloudy wine could still be bottled, but if you wait, you will get a crystal clear wine, with more pleasant and neater flavors.</p>
<p>Here you are! Now you can proudly bottle your wine, after cleaning and sanitizing the bottles. A small quantity of Campden tablets or sulfites can be added at this stage to protect the wine from oxidation and further stabilize it.</p>
<p>If you prefer to keep it in a container, you can, provided it is perfectly closed. In this case, you will need to transfer the wine (still leaving the gunk at the bottom of the first bucket) into a container fitted with a tap. This will allow you to drink your wine without having to open the container and expose the wine to oxygen.</p>
<p>Finally, remember the wine will taste much better after aging at least 6 to 9 months. Aging in the container is possible too, provided you are very careful about hermeticity and leave a sufficient quantity inside.</p>

			<content:encoded><![CDATA[<p>If you&#8217;re thinking about <b >making</b> your own homemade wine, here are some things you should know about the <b >equipment</b> required to get you started.</p>
<p>First and foremost, we need to talk about cost. You could visit online merchants here, there and everywhere to shop around for the best prices on individual items you&#8217;ll need to start <b >making</b> your own wine, but most sites that sell <b >equipment</b> offer some sort of beginning <b >equipment</b> kit that will have all the items you need to get your wine <b >making</b> career started. This is absolutely the best way to go in my opinion. Kits will run anywhere from $80-$150. That&#8217;s a lot of money, but this <b >equipment</b> can be used over and ever and thus will eventually pay for itself.</p>
<p>So what&#8217;s included in a kit, anyway? For starters you&#8217;ll get a plastic primary fermentation bucket, usually around 8 gallons. After primary fermentation you&#8217;ll need something to transfer your wine into for secondary fermentation. This is usually a 5 or 6 gallon glass bottle, called a carboy, although in some kits the secondary is plastic.</p>
<p>Also included will be some rubber stoppers that fit the fermenting vessels, and an airlock, which is a device used to let carbon dioxide out when your wine is fermenting while not allowing air and bacteria in. You should also get a couple of brushes, one for cleaning the bottles and another so you can clean the carboy.</p>
<p>Some sort of cleaning agent and also a sanitizer will be included. Cleaning and sanitizing is a crucial step when <b >making</b> wine. A length of plastic tubing will be supplied, and a sometimes a device called a racking tube which aids in transferring your wine from one vessel to the other. Some kits also include a little device to slip onto the plastic tube that allows you to shut off the flow of wine when you&#8217;re bottling.</p>
<p>Most kits include a hydrometer. This is a device that measures the specific gravity of the wine during various stages of development. You can also use it to measure the potential alcohol of your wine. Corks are also in most <b >equipment</b> kits, as is some sort of corker to insert the corks.</p>
<p>This is the minimum list of items, and you&#8217;ll find some kits that include much more. What is generally NOT included is an ingredient kit, although some sellers will allow you to add one to your package for a reduced price and if you can afford it, this is a good way to go. Bottles are usually not included either, but are easy to collect from friends and family.</p>
